Snickerdoodle Pumpkin Pie Macs??

Lets be honest. Pumpkin pie can definetively stand alone when it comes to deliciousness. But why not just take it one more step? These Snickerdoodle Pumpkin Macs layer up that delicious flavor. With just a small modification to our traditional Pumpkin Pie Macaron you will have a flavor-enhanced macaron.



First you are going to sprinkle sinnamon sugar on your shells after you have piped, tapped and popped air bubbles. Just a small shake of a premixed cinnamon sugar (I cup sugar, 2 Tbsp cinnamon) will give the sweetest texture already perfect shells.

I know there will be questions about how much to sprinkle on the mac? So I made a reel, complete with the perfect tune to show you how much.  You all know that big blobs of sugary sprinkles make holes in the shells.  Go ahead, watch it, and then come back here for another taste treat.

Assemble the Macs

After your shells are baked, cooled and ready, it’s time to assemble. We took our Pumpkin Pie Buttercream and added an extra 1/2 tsp cinnamon. Trust me. It’s delicious. Pipe as usual leaving a well in the middle.  Now add a dab of our Pumpkin Pie Custard.  I sometimes shake a bit more cinnamon-sugar over the custard before closing up the mac.  If you want some crunch, try our Pie Crust Crumble on top.
