Strawberry Milkshake Macarons
I always know summer is on its way when the man stands on the corner selling his boxes of strawberries. They also show up in the markets about that time, and oh my–what a fresh taste of summer a strawberry is: red and rosy and pink inside with a fresh burst of sweet flavor. Yep. That’s how I know summer’s just around the corner. After tasting an especially great basket of strawberries, I thought “I can Mac That!” and this was the result. Happy Summer!
Assemble your ingredients:
Macarons, obviously our recipe.
A batch of our American Buttercream, again, our recipe.
Junket Very Vanilla ice cream mix (found in your grocer’s)
Any freeze-dried fruit you have on hand. Process it into a fine powder using a food processor.
To 1 cup of butter cream add:
1Tbsp. ice cream mix
1 tsp. fruit powder from freeze-dried fruit
Mix all together. You can double or triple this batch to make as many macarons as you want.
One cup of buttercream yields 2 dozen macs.
Some additives
With a milkshake like this, you can add a maraschino cherry to your filling. Finely chop one cherry and use it in 5-6 macarons, just after piping on the buttercream and before matching it up with a lid. You can do also a caramel drizzle, or chocolate drizzle, really…so many summery options!
