SweetMacShop’s Red Baklava Macs

Red is for hot, hot summer.  Red is part of the Red, White and Blue for the Olympics.  Red is for summer fruit of cherries, strawberries, raspberries.  And red is the color of one of our favorite macarons: Baklava.  We chose red initially because we thought, Christmas, and then, Christmas in July, but hey! it’s August now.  The heat is still on and we still love our red!

The first thing you need is some how-to’s for that rich, luscious red. We have a post on here that will compare the different colors from different makers, and how many drops it takes to get the red you want.

The next thing you’ll need to make our amazing Baklava macarons is the recipe (see below).  The recipe inspiration was Barb’s mother’s award-winning baklava recipe that she made every year at the holidays.  But then we realized that the taste was rich and yummy and it hit us: We could Mac that!

But that wasn’t the only motivating factor for this delicious recipe.  We had decided to help raise money for the Younique Foundation, a worthy organization that helps women recover from sexual abuse.  This is a timely topic, given the news from the Olympics, and we were so proud of our readers who donated close to $7,000 dollars for the Younique Foundation.  Younique’s mission includes inspiring “hope in women who were sexually abused as children or adolescents; educate and empower parents and caregivers to protect children; and advocate for open discussions through community dialogue and social awareness.”  Thank you to everyone who contributed!

The first step in making these macs is to modify the American Buttercream. Mix up some of the Baklava Topping, make up some of the syrup and you are ready to go after making those brilliantly colored shells.


Pipe a ring of that modified American Buttercream, then add the Baklava Filling.  Lastly, drizzle a dribble of that special syrup over the top.  Go, red, indeed!

Ingredients for Simple Syrup for Baklava Macs

  • 1 ½ cups granulated sugar
  • 3/4 cup water
  • 1 Tbls. freshly squeezed lemon juice
  • 1 Tbls. honey

Ingredients for Baklva Topping

  • 1 cup walnuts
  • 1/8 cup granulated sugar
  • tsp. cinnamon


Directions for Simple Syrup for Baklava Macs

  • Combine sugar, water and lemon juice in a small sauce pan and stirring continually, cook over moderate heat until the sugar dissolves.
  • Increase heat to high and begin timing from the moment the syrup boils.  Cook briskly, uncovered, for about 5 minutes.
  • Remove pan from heat and stir in honey. Pour the syrup into a pitcher or other container with a pour spout, and set aside to cool. Later you will add this to the buttercream and also directly to the mac.

Directions for Baklava Topping

  • Whirl together in food processor, until nuts are roughly chopped. Set aside.

How to Modify the American Buttercream for Baklava

  • Cut down the whipping cream in the original LARGER recipe to just 2 Tablespoons, adding instead one-fourth cup of the Simple Syrup.  The consistency will change, but trust me, it’s still pipeable!

  • Cut down the whipping cream in the new SMALLER recipe to just 1 Tablespoon, adding instead one-eighth cup of the Simple Syrup.  The consistency will change, but trust me, it’s still pipeable!
