Sugar Cookie Crumbles

Taking our sweet crumbles and adding them to the perfectly sweet sugar cookie.

Sugar cookie

  • 1 cup unsalted butter room temperature
  • 1 1/2 cups granulated sugar
  • 1/2 cup whole milk
  • 1/4 cup heavy whipping cream
  • 1 tsp vanilla
  • 4 -4 1/2 cups white all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup Crumble recipe (see below)

Crumble Recipe

  • 100 grams granulated sugar 1 cup
  • 25 grams brown sugar 1.5 Tbsp
  • 90 grams cake flour 3/4 cup
  • 2 grams baking powder 1/2 tsp
  • 2 grams salt 1/2 tsp
  • 40 grams vegetable oil 1/4 cup
  • 10 grams vanilla extract 1 Tbsp
  • 2 tsp. pumpkin spice

Dulce Frosting

  • 1/4 cup Crisco shortening
  • 1/4 cup butter (unsalted)
  • 3/4 cup heavy whipping cream
  • 4-5 cups powdered sugar
  • 3 Tbsp. Dulce De Leche
  • 1 tsp. cinnamon


Crumble Instructions

  • Preheat oven to 300. Line baking sheet with parchment paper. Combine dry ingredients in bowl of stand mixer. Turn on low until ingredients are incorporated. Add oil and extract. Turn on low again just until crumble comes together. Pour onto baking sheet and bake for 20 minutes. You can shake on additional pumpkin spice once baked.

Sugar Cookie Instructions

  • Preheat oven to 350. Line baking sheet with parchment (or bake directly onto cookie sheet).
  • In stand mixer with paddle attachment, add room-temperature butter and sugar and beat for 3-5 minutes, until fluffy. Add milk, cream and vanilla. Beat until combined.
    Combine flour, baking powder, baking soda and salt whisking together. Add 1 cup at a time into butter mixture. When finished adding the all the flour, beat until just combined.
    Scoop cookies onto prepared sheets. I used a OXO scoop size 20 giving me a yield of 22 cookies out of the batch.
    Once scooped, flatten out with your hands and add 1 tsp (or more) crumble. Roll back into a ball and place on cookie sheet.
    Bake 8-10 minutes, or until barely golden brown around the base of the cookie.

Dulce de Leche Frosting

  • Add butter and shortening to a bowl; using a hand mixer, beat until blended. Add in heavy whipping cream, dulce de leche, and cinnamon. Mix in powdered sugar one cup at a time until mixture is thick. Continue beating until all ingredients are combined and mixture is smooth.

Putting It All Together

  • Once cookie is cooled, and crumble is cooled, make frosting. Frost cooled cookie and immediately sprinkle crumble over the top. Store in an airtight container.
